freezing soup

freezing soup

i have a massive amount of veg left from xmas so i wanted to have a soup day but can i freeze it okay if it has cream in it

ta in advance

also any fancy recipies would be cool
i have loads of winter veg and mushrooms and peppers

I would think that would be fine, you find "cream of" soups in the freezer section in the super market.
You could try freezing a bit just to be sure.
Or in future make the soup without the cream then add the creamin when you intend to use it.

I'd cook it without the cream and then add that when reheating after defrosting.

The worst that could happen is the cream might separate. If that would be a problem, you could add in flour until the soup is very thick, that will bind to the cream and make it harder for it to separate, and easier to mix back in if it does.

The problem with freezing cream - or amything else "full fat" for that matter - is that the freezin process makes it go sour quite quickly. You're better off cooking it without the cream in - perhaps add it later
