Aphrodites Flan

I found this recipe on the net ages ago - can't remember source. Thought I'd post it here because it's really tasty, easy to make and really easy to make a vegan version. In fact I make both at the same time (I'm happy to use vegan marg and soya milk to make the pastry) so my daughter's happy and so are we omnivores.

Aphrodites Flan

Metric Ingredients Imperial
150g Spelt Flour 6oz - I used wholemeal flour
75g butter 3oz - I use vegan marg (in fact Stork)
any milk to mix
100g pine kernels 4oz
100g runny honey 4oz
1 egg 1

1. Make pastry by blending the butter with the spelt
flour until the mixture resembles breadcrumbs.
Add milk to form a dough.
2. Roll out pastry on a floured surface then place in
oiled 20cm (8") flan dish.
3. Beat together the egg and honey. Add pine kernels
and pour into flan dish.
4. Bake in an oven preheated to 190°C/375°F/Gas Mark 5,
for 25 - 30 min.

Veganise this by replacing egg with 1/2 carton of silken tofu and honey with maple syrup.

sounds delicious might give that a go although i have to dig out a flan tin though

and i did not realise Stork was vegan!
