Meat Curry Powder
6 tbspns coriander seeds
2 tbspns cumin seeds
1 tbspn fennel seeds
12 black peppercorns
4 cardamom pods
4 cloves
5cm/2 inch cinnamon stick
10 dried red chillies or 1 tspn ground chilli
1 tbspn ground turmeric
Fish Curry Powder
6 tbpns coriander seeds
2 tbspns fennel seeds
1 tbspn cumin seeds
1 tspn fenugreek seeds

1 tbspn ground turmeric
Spices should be dry roasted separately then ground. After grinding, mix spices together thoroughly. Allow to cool completely and store in screwtop jars. Will keep fresh for up to 3 months. Alternatively, it can be stored in airtight containers in the freezer. It will remain fresh almost indefinitely and will not set solid.
