I discovered by chance that pumpkins and lentils make a delicious combination. I made a load of pumpkin soup using our last pumpkin, but added too much stock, so chucked in a load of red lentils to thicken it up. Really tasty!
I didn't follow a recipe, just sweated a few onions, added the chopped pumpkin plus stock, brought it to the boil and threw in the lentils.
I also roasted the pumpkin seeds - I usually can't be bothered and sling them in the compost bin, but they were well worth the effort. Kept us all munching for ages!

pumpkins are on my wishlist too - I LOVE pumpkin soup and will be sure to add some lentils when it's time to cook it.
