Quick Lemon Cheesecake

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Quick Lemon Cheesecake

Digestive biscuits (or hobnobs)
Butter

Tin condensed milk
Double cream (1 pint)
Lemons (unwaxed if you want to use the rind) x 6 (to taste)

Amounts depend on size of your dish – above for 12 inch flan dish

1. Melt the butter, crush the biscuits and mix together. Press into the base of your dish.

2. Squeeze the lemon juice (adding a lime is good too), sieve and put to one side.

3. Mix the cream and condensed milk in a bowl with a hand whisk.

4. Add the lemon juice – tasting as you go along (because it is so delicious!!). Don’t worry if it looks like it’s curdling – just mix it again.

5. Add some grated lemon rind if you like that kind of thing!

6. Pour the mixture onto the base and put it in the fridge for at least 2 hours.

7. Serve with anything you fancy…

This is my recipe that I've been making for years - but you've missed out the cream cheese! So you see now why Nestle's milk is an essential in my life!

How much cream cheese do you add and when 3M? It's a fantastic as it is... :wink:

This is my recipe. I just wondered about yours because it doesn't contain cheese, that's all!

CHEESECAKE

150 ml single cream
Tin Nestles Milk
175g cream cheese
Grated rind of 3 lemons (I prefer to use just one)
Juice of 3 lemons

Base:
Depending on size of your flan dish, about 15 digestive biscuits to about 55g melted butter. (I use about 20 biccies and just keep adding melted butter until I get the right consistency)

Method
1. Crush biccies, add melted butter, mix it in, press into flan dish and put in fridge to cool and set whilst making the topping.
2. Mix cream cheese with the cream and the Nestles Milk. Electric mixer comes in handy!
3. Add the lemon rind.
4. Slowly add the lemon juice, beating all the time. It will start to thicken.
5. Add mixture to biscuit base and chill for several hours.
6. Lick all spoons and mixing bowls!
7. Eat cheesecake! Then wish you had made more!

I'd try your version but alas double cream doesn't exist in France! Can't make it as often as I'd like to because kind friends and family have to bring the digestive biccies over from the UK. :cry:

hmm have to get into the kitchen tomorrow.

this is my favourite 'cheesecake' slice
made in a 20cm plastic cake container

1 pkt crushed plain biscuits (arnotts marie or milk arrowroot)
220gram melted butter

mix and press into container

1 tin condensed milk
2 tsp gelatine dissolved in 3/4 cup boiling water
1/2 cup lemon juice

mix together and spread over biscuit base

refridgerate for about 30 mins or until set

2 port wine jellies made up with 2 cups of water

I knew there was a reason for wanting to find condensed milk - I just wish I could find some that wasn't nestle - I've looked for own brand stuff... will have to try and make my own!

When I worked in France, my boss sometimes bought McVities digestives at the supermarket for me! Can't remember what it was called - Mammout or something like that? Don't know how much they charged for it, though. It was my special treat!

You can find them sometimes, in the larger supermarkets which have a British section. The problem is the price...... :cry:

through desperation why not make some plain biscuits (flour, butter, sugar, maybe egg - books require leaving the computer) cook, cool and crush.

I did think about it but I still have a stash of digestives at the moment. :tongue8:

I looked at my alternative sweetened condensed milk which is available at one of the major supermarket chains. It just says 'Imported from Holland by SAD'. I thought that was quite funny! :toothy10:

on the left hand side of the main page budget 101, there is a link to 'make your own'. scroll down and there is a recipe for sweetened condensed milk. I haven't used this recipe but other 'trails' from this site have been successful.
