Summer Squash

Okay, now this is just silly.

Partially, it's my fault, I admit it, Lessons Learned for next year - don't plant yellow courgette and yellow summer squash next to each other and then forget which was which

Partially, it's the weather. I didn't think it was unrealistic to expect to be able to make it down to the allotment without scuba gear for weeks at a time.

Anyway, what to do with yellow squash (or courgettes) when they're size of a caveman's club? I've tried baked, it wasn't great. We've had it in a tagine. That was good, but then the tagine is an excellent recipe.

More ideas? Please? I almost dread going back down, they might have taken over the entire site by now!

Grate and freeze, in cup size servings... its what I did with 2 monster courgettes (6 and 7 lbs) that we had. Then it can be added to bread, tomato sauce, pizza topping, etc.

I use the big courgettes/marrows to make relish. Actually, it's the primary reason I plant them. I made some pickles this year as well, but haven't tried them yet. I want to let the flavours blend some before I open the jars.

I understand you can use them in chutney too.

The American recipe sites have a lot of recipes for relish and pickles - just remember that in America they are called zucchini.

U could still use them to make courgette soup - I used my overgrown ones for that
