You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I use the Cookie Recipe from The River Cottage Family Cookbook.

It's super quick and easy and I change the chocolate for other things depending on what's in the cupboard, as I do a gluten free version I have so far discovered Galaxy Minstrel - Chip Cookies to be the best !! :love2: :love2: :love2:

I stole this recipie from the net, but my G.ma used to make "swedish peppernuts" from a wee ancient newspaperclipping she had and they were FANTASTIC! this recipie looks quite similar - i would up the Pepper content though - they should be SPICY!


Ingredients:
4 cups all-purpose flour
2 eggs
3/4 cup butter
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cups brown sugar
1 teaspoon white pepper
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon ground ginger
3/4 teaspoon salt

Preparation:
1. Using an electric mixer, beat the butter and sugar.
2. Add the egg, a cup of flour, the other egg, one more cup of flour, the spices and finally the rest of the flour.
3. Roll the soft dough into a ball, put in a plastic bag, cover and place in the refrigerator for at least 20 hours.
4. Use 1/2 teaspoon of dough for each cookie.
5. roll in balls then roll in white sugar and flatten onto a baking tray
5. Preheat the oven to 320 degrees F.
5. bake for about 11-15 minutes.

I have just made the HFW choc chip cookies which I haven't tried yet as they really spread out and were quite big (wasn't expecting that!) and the oatmeal nut spice ones I did were a much more firm mix so they didn't so much. Recipe said 24 servings but it made 39 cookies! :shock:

I added about 50g chopped walnuts and 1tsp ground ginger and 1tsp ground cinnamon but none of the vile evil vanilla!

They are really yummy. :thumbright:

Honey and Oat bars Yum Yum Yum! Thankyou Susie, these will definitely be a regular in our house from now on. Lovely to have a delicious new recipe. :hugish:

Lemon Sunflower cake:
5 oz SR flour & 1 tsp baking powder
4oz sugar & 4 oz butter
2 eggs
grated zest of 1 lemon, (couple of pinches of mixed spice and cinnamon nice in winter)

Mix it all together in mixer or by hand: cream sugar and butter, then eggs, then flour etc.
Stir in 3 tablespoons of sunflower seeds and one of linseed. 1lb lined loaf tin for 40 mins at 170.

Let cool, then spoon over the juice of the lemon mixed with a tablespoon of honey (this is why it's good to line the tin). Munch munch munch : ) Freezes well and if you slice it up, super easy to get out a couple of slices and warm through wrapped in foil in oven while your tea's cooking for a quick pud. xx

Digestives:

250g wholemeal flour
250g butter
250g oatmeal
125g sugar
1tsp salt
2 tsp baking powder
enough milk to make it all hold together

Rub butter & flour to make breadcrumbs.
Add the rest of the dried ingredients & mix.
Add milk gradually until it forms a dough.

Leave to rest in fridge for half an hour (I have left half in there to use in a couple of days).
Dust with flour & roll out to 3-4mm thick (easier between sheets of greaseproof paper).
Cut out and bake at 180 degrees (non-stick baking tray or lined with greaseproof paper is easier as they are quite fragile) for up to ten mins until golden at ages and lightly coloured all over.

if nuts aren't a prob then my faves have always been peanut butter cookies

125g butter, 150g chunky peanut butter, 220g sugar, 1 egg, 150g plain flour

mix it all together into adough ball ( add more flour if a bit too sticky)
chill in the fridge for half an hour to stiffen
roll out and cut into whatever shape you like
bake in oven (pre heated to 190c / gas 5 / 375f ) for 15 -20 mins or till golden

really yummy and crumbly biccies
