Courgette and Pumpkin recipes
Hey, I have soooo many courgettes (mrs wild flower if you want some come visit us!!!) and have seven pumpkin plants so am going to have an abundance of all these. Do you guys have any recipes to share. I know the standard ones, but my little guys love baking, so any muffin, loaves or cakes when be good, particularly a pumpkin bread recipe? I don't ask for much!!!

Come and visit you to get courgettes, ... short answer 'no'. I was sick last week and couldn't get out to the garden ... so this morning I harvested 6 marrows, the largest being 2 feet long!Growing Mama wrote:Hey, I have soooo many courgettes (mrs wild flower if you want some come visit us!!!) !!

WOW, that is so exciting, the birthday bit, not the marrow bit!! What are you planning on doing for his birthday? make a stuffing mix out of
fried off good quality minced meat (or Sosmix, or left over nutroast)
onion
stuffing mix (not too much) made to box specifications
dash or worcester sauce
dribble of bovril
various grated root veg with most of water squeezed out
grated cheese
cut in half lengthwise. hollow out the corguettes (one per person) or marrow (if it's about 4 in in diameter, allow a 2in slab per person). add some of the pulp chopped to your stuffing. fill each half with stuffing, add some cheese to one half then carefully squidge the halves back together and wrap in foil or skewer through the middle somehow.
cook in oven at 180C (160-170C fan oven) 350F, GM4, or an aga which browns a aprinkle of flour on the base in about 3 mins. cook for 20 mins. serve.
