You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I was given 50 lbs of bananas :shock: and froze them, now I plan to use them for something.

I make banana cake - yummy

125g butter
1/2 cup caster sugar
2 eggs, lightly beaten
1 1/2 cups mashed ripe bananas (about 4 medium)
1tsp bicarbonate of soda
1/2 cup milk
2 cups self raising flour (250g)

1. beat butter and sugar in bowl until light and creamy. Add eggs gradually, beating thoroughly after each addition. Add mashed banana - beat until combined.

2. dissolve soda in milk, using a metal spoon fold in sifted flour altenately with milk. Stir until all ingredients are just combined and the mixture is smooth.

3. Spoon into a prepared tin (recipe book says a 20cm round cake tin) bake for 1 hour at 180C or until a skewer comes out clean when inserted into the centre of the cake. Leave in tin for 10mins before turning out.

Can't remember where i got any of these from - they could be repeats from here, or gleaned from elsewhere:

Cardamom Banana Bread (adapted)

2 cups cake flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup butter, softened
2 large eggs
1 1/2 cups mashed ripe banana (about 3 bananas)
1/3 cup reduced-fat sour cream
1 teaspoon ground cardamom (or more)

Preheat oven to 350-degrees and coat a 9 x 5-inch loaf pan with cooking spray.

Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.

Place sugars and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, sour cream, and cardamom; beat until blended. Add flour mixture; beat at low speed just until moist. Stir in pistachios. Spoon batter into loaf pan and bake for an hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool bread completely on wire rack.

Spicy Banana Bread
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cloves
1/2 cup unsalted butter
1 cup sugar
2 eggs
1 cup mashed bananas
1/4 cup orange juice
1 cup chopped walnuts
1 tsp. vanilla

Preheat oven to 350-degrees. Grease and flour a 9x5x3 inch loaf pan. Soften butter to room temperature. Sift flour with baking soda, salt and spices. Cream butter and gradually add sugar, beating until the mixture is light and fluffy. Beat in eggs, one at a time. Add sifted dry ingredients alternately with mashed bananas and orange juice, stirring only to blend. Fold in nuts and vanilla. Pour batter into greased loaf pan and bake one hour. Let cool 30 mins. in pan.


Very tasty, and the flavors seem to intensify as the bread cools. A great accompaniment to a well-brewed cup of tea. I can't wait to toast a slice and smear it with butter.

Terrible Healthy banana Loaf (i'm pretty sure this is from someone here - i've got the feeling it might be Stoney...)

50g sunflower oil
2 eggs
3-4 ripe bananas, mashed (3 large or 4 medium)
2 tablespoons lemon juice
grated lemon rind (optional)

mix, add:

250g wholemeal flour, mixed with 1 tablespoon baking powder

If the mixture is too stiff, add a little milk.

Now add one or several of the following:

50g each of
- sunflower seeds
- raisins or sultanas
- other chopped dried fruit
- chopped nuts
- coconut

(The one last Wednesday had sunflower seeds, coconut and raisins in it, and no lemon rind.)

Bake in greased loaf tin at medium heat for about one hour.

Title: Amazing Banana Nut Roll
Yield: 10
1 package (8-oz) cream cheese; softened
1 package (3-oz) cream cheese; softened
1/2 cups Sugar
1 Egg
3 tablespoons Milk
1/2 cups All-purpose flour
1/2 teaspoons Baking powder
1/4 teaspoons Baking soda
4 Egg yolks
1/2 teaspoons Vanilla
1/3 cups Sugar
1 large Banana; mashed (about 1/2 cup per banana)
1/2 cups Finely chopped walnuts or pecans
4 Egg whites
1/2 cups Sugar
1 Recipe cream cheese frosting #3
Powdered sugar
Chocolate-flavored syrup (optional)



Lightly grease a 15x10x1-inch baking pan. Line bottom with waxed paper;
grease paper. Set aside

FOR FILLING: In a small bowl combine cream cheese and sugar; beat with an
electric mixer on medium speed until smooth. Add whole egg and milk; beat
until combined. Spread in the prepared pan; set aside.

FOR CAKE: In a medium mixing bowl stir together flour, baking powder, and
baking soda; set aside.

In a small mixer bowl beat egg yolks and vanilla on medium speed about 5
minutes or until thick and lemon colored. Gradually add the 1/3 cup sugar,
beating until sugar is dissolved. Stir in banana and nuts.

Thoroughly wash the beaters. In a large mixing bowl beat the egg whites on
medium speed until soft peaks form (tips curl). Gradually add the 1/2 cup
sugar, beating on high speed until stiff peaks form (tips stand straight).

Fold yolk mixture into egg whites. Sprinkle the flour mixture evenly over
egg mixture; fold in just until blended.

Carefully spread the batter evenly over the filling in the pan. Bake in a
375 degree oven for 15-20 minutes or until the cake springs back when
lightly touched.

Immediately loosen the cake from sides of pan and turn out onto a towel
sprinkled with powdered sugar. Carefully peel off paper. Starting with
narrow end, roll up cake using towel as a guide. (Do not roll towel into
cake.) Cool completely on a wire rack.

Spread top with Cream Cheese Frosting #3 (there are other recipes in the
master file, if desired--#3 goes with this recipe). If desired, drizzle
with chocolate syrup. Makes 10 servings

Banana Orange Chiffon Cake
Yield: 1
2 1/4 cups Sifted cake flour
1 1/2 cups Sugar
3 teaspoons Baking powder
1 teaspoon Salt
1/2 cups Corn oil
6 large Eggs; separated
1 cup Sieved ripe bananas (2 lg.)
1 teaspoon Grated orange rind
1/3 cups Orange Juice
1/2 teaspoons Cream of tartarORANGE FROSTING:
2 tablespoons Butter
1 tablespoon Light corn syrup
1/2 teaspoons Grated orange rind
1 cup Sifted confectioner's sugar
1 tablespoon Orange Juice


Preparation : Into a medium mixing bowl sift together the flour, sugar,
baking powder and salt. Make a well in the center; add corn oil, egg yolks,
banana, orange rind, and orange juice. With a wooden spoon beat until
smooth. In a large mixing bowl beat egg whites and cream of tartar until
whites hold stiff peaks when beater is slowly withdrawn. Gently fold in
flour mixture, blending well. Pour into an ungreased angel food cake pan -
10 x 4 inches. Bake in a preheated 325 degree oven until a cake tester
inserted comes out clean and cake springs back when touched - 1 hour and 10
or 15 minutes. At once invert pan and let stand on legs; if pan does not
have legs invert over a funnel or bottle; cool completely. With a small
metal spatula loosen edges and around tube; ease out of pan with fingers.
Leave cake bottom side up (top will have cracks) and cover with Orange
Frosting. Cake my be cut into 15 (2-inch) wedges.

Best and Easiest Banana Cake ( slightly adapted)

Cake:
12 Tbsp unsalted butter, softened
1/2 cup firmly packed light brown sugar
1/2 cup granulated sugar
3 large eggs
1 tsp. vanilla
2 1/2 cups cake flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cinnamon
1/8 tsp nutmeg
1 cup mashed, very ripe bananas (about 6-7 oz each)
3/4 cup milk or buttermilk

Cream Cheese Frosting (double to cover top and sides of cake)
1/2 stick butter, softened (4 Tbsp.)
1/2 lb. cream cheese, softened
1 c. confectioners' sugar
1 tsp. vanilla.

Set a rack in the middle of the oven and preheat to 350-degrees F. Grease two 9-inch cake pans, lining the bottom with parchement.

In a large mixing bowl, cream butter until soft and light. Gradually beat in the sugars and continue beating about 5 minutes until very light. Beat in eggs one at a time, beating smooth between each addition, scraping bowl and beater(s) occasionally. Beat in vanilla.

Stir baking soda, powder, cinnamon, and nutmeg into cake flour and sift over butter and egg mixture. Stir in bananas and milk to mix. Beat by machine on low for 2 minutes, scraping bowl and beater(s) several times.

Pour batter into pans and bake for about 25 minutes, until well risen and a skewer inserted in the center emerges clean. Cool cakes in pans for 10 minutes, then cover with a rack and remove paper and pan. Immediately turn cake right side up and finish cooling.

To make frosting, beat butter at medium speed until soft and light. Beat in cream cheese and continue beating until very smooth. Add remaining ingredients and beat until smooth. Continue beating about 5 minutes to aerate. Use immediately.

To finish cake, place one round on a plate, trimming rounded top if needed, and cover with icing. Then top with other layer (again, trimming if needed) and cover with the rest of the icing.

Nope - that looks like mine! And it's not terrible, it's terribly healthy... :mrgreen:

Anyway: no idea what they come out like after being frozen, but you might use some in curry, or fried (either seasoned with curry, or with honey as dessert). There's only so much cake you can eat...

You can eat partially defrosted bananas like ice lollies. Dip in melted chocolate (and 100's and 1000's or chopped nuts) if you feel like it. Very popular with most passing children :lol:

I have a recipe for banana jam somewhere, but I've never tried it. You'll probably find something similar on google.

Try blending into pancake mix- lovely for breakfast.

Blend whilst still frozen with natural yogurt and honey for an instant ice cream.

Make banana custard :cooldude:

From my Grans recipe book (collected recipes from The Farmers Weekly C 1946):
Banana Fingers (from Miss H Rowlinson, Cheshire)
Mix 1/2 lb oats, 1/2 lb sugar, 1/2 lb wholemeal flour, 1/2 lb butter and 1/2 tsp soda bic or 1 tsp baking powder to a stiff dough with 2 eggs.
Put half in a greased shallow tin about 9" square. Slice (or mash if they're too mushy) about 4 bananas on top, then top with the rest of the mixture.
Bake until golden (no details given, but I put it in at about 180C ) and cut into fingers.

This is very nice- a cross between cake and flapjack :cooldude:

Banana Tart (from Mrs E Birkett, Cumberland)
Fill a greased pie dish with sliced bananas. Add juice of half a lemon and 1-1 1/2 tbsp sugar. Top with flaky pastry and bake until browned.

Haven't tried this, but sounds nice.

I'm pretty sure you could make a banana (with or without chocolate) proper (yeasted) bread too.

Use one of many loaves of banana bread/cake to make bread or bread and butter pudding.

google for a banana bread pudding recipe

Don't forget you can freeze the banana cakes once you've made them. Freezing individual pieces is useful for packed lunches.

I've mixed some banana in with gooseberries or black currants when making jam, basically to soften the harsh flavours of some fruit. Never made jam just from bananas; I think I would probably find it a bit too sweet.

Banana jam is wonderful - it goes a lovely red colour believe it or not! It isn't any sweeter than any other kind of jam.

OK - next time I have a surplus of bananas threatening to go too ripe... But honestly, gooseberry and banana is great. About 1/6 to 1/5 of the total fruit weight banana is all it needs to give it the flavour.

Well I don't, other people do! I did try once but it turned into toffee. :cry: Maybe the bananas were different - it was in Fiji where banana jam is quite a common thing like strawberry jam is here!

I made banana pie once - just like you make pumpkin. give a wee squeeze of lemon juice though - stops it from going brown. was ok. not as brilliant as i hoped though.

Bana caramel pie with banana slices is much better IMHO
