green tomatoes

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

yes - the banana gives off a gas that encourages ripening I think...

I too have collected lots of green toms - and they are turning red just sitting in bowls on the kitchen table. leaving a few red tomatoes with them helps... the ripe ones give off that same ripening gas thingy...

I've got a recipe somewhere that involves green tomatoes and mayonnaise and baking them to make a pie. I haven't tried it, but when Sophie Grigson says the recipe sounds bizzarre but tastes delicious, she's usually right!

don's chemist hat the gas believe it or not is ethylene. Said same gas that we derive from oil/gas industry and then make polyethylene,PVC.. etc hmmm we could go for a bio alternative and cover the planet in banana's and capture all the ethylene gas :dave:

Same gas is produced by all fruit trees as the ripening mechanism, It's what makes fruit drop from the trees.
It's not easy being Cheezy
So you know how great Salsify is as a veg, what about Cavero Nero,great leaves all through the winter , then in Spring sprouting broccolli like flowers! Takes up half as much room as broccolli
