When I was a boy, long long ago, we had a big pot on the back of the stove into which any vege scraps and peelings were thrown. There was never any meat products added unless it was all going to be used that day. It was only ever topped up and freshly boiled for a soup almost every day.
What I don't like about those stupid cooks on the TV is they always go on about resting their meat, but methinks it is only to let it cool enough so that they can play with it with their dirty fingures to create something like art on a plate instead of a plate full of food.
