BAKED APPLES AND OTHER RECIPES PLEASE
WELL MY FRIEND TURNED UP WITH ABOUT 40LB OF COOKING APPLES.
WIFES MADE A CRUMBLE

This is yummy and sticky and very very edible.
Turkish Apple Cake
4 Large apples (any kind)
1 lemon
4oz Plain flour
1 tsp of Baking Powder
4oz of sugar (any kind)
1 tsp vanilla essence
4oz sultanas or raisins
4oz nuts any
1 Egg
Chop apples into smallish lumps, add vanilla and lemon juice. Sieve on flour, make a well in the centre, then add the egg, sultanas, nuts and mix well. Spread into a greased tray and bake in a moderate oven for 30mins.

I had an apple glut last year - nobody has brought any along this year, though...
Anyway, I made a lot of apple sauce, and stewed apple, for freezing. Nice to eat with custard, or rice pudding - not just with roast pork! Still have some in the freezer - but I only made that in January (this year!!!), because the apples kept fine for that long. So if I were you I'd try to hang on to some of them, and not use it all up straight away.
(If you keep them in the cellar or any other of those useful "cool places", don't keep them near your tatties - I've heard they don't like that and make each other go off. No idea why, probably some gas they exhale - where is the chemist who can explain that to us?)

The gas is ethylene CH2-CH2 which is given off by fruit and tends to make things (including other fruit) ripen very quckly then go "off". It is used here in CA (controlled atmosphere) fruit storage!

Thanks Nev, how did you know it was you I meant when I was asking for the chemist...
? I suppose that's the same gas that makes tomatoes go red when you put banana skins in amongst them?
Reminds me, my brother once said he always got a headache when he was doing a lot of apple juicing, and he suspected that it was that gas being released during the process. Is that possible?

That's just me I guess!
From what I have read, it is unlikely that ethylene caused the problem.
