Yogurt and applejuice wholemeal bread

Yogurt and applejuice wholemeal bread

Inspired by the thread on yogurt http://www.selfsufficientish.com/forum/ ... 7495#67495 and a glut of apples, resulting in several pints of apple juice, I concocted this bread machine recipe. It's quite a firm bread which cuts easily. It is mildly flavoured so would be ideal for sandwiches.

Small (larger loaves available, ask if you want the quantities).

5 floz/150ml applejuice
4.5 floz/125ml yogurt (I used natural)
1 tbsp sunflower oil
1 tbsp medlar syrup (you could use honey or maple syrup)
7 oz/200g white bread flour
5.5 oz/150g wholemeal bread flour
1 oz/25g barley flakes
1.5 tsp dried yeast
.75 tsp salt

Use the basic/normal setting on your breadmaker.

Just picking up windfalls at the moment and picking off the little ones. I have an eater that is almost ripe now (no idea what it is). The fruit go a lovely bright red and the juice is red as well :lol:

With the weather this year I was expecting large, unripe apples. Instead I have loads of small, early apples. Just as I thought I understood them :roll:

... and my damsons are ripe which is about 3 weeks earlier than last year. So that must mean they are happier with cool, wet and not very sunny weather than hot, dry and very sunny!

picked the first eating apple yesterday - well my son did - its his tree - a dwarf one cos he wanted to be able to reach them all - variety = scrumptious - and it was!

Sweet? I must try one of mine again as I thought they were sour and only good for jam or chutney!

They need to be really soft. You have to catch them just right otherwise they go over. I pick a few each morning. But I shall probably have to strip the tree soon or the birds will get them.

Hmmm - I wonder if they are a different sort? I must admit I was surprised that I could eat mine at all. All the damsons I've had in the past have been quite tart. I shall have to try to identify my tree.

Mine are softening but they are not at the squidgy stage yet - so just right for jam which I won't be making now!! :lol: Never mind, still got tons of last year's jam so it doesn't really matter. I was just hoping I might be able to eat a few... but I have a big greengage tree so there will be tons of plums eventually.

Oh greengages, yum. I have one but it's planted on a piece of land so narrow that the branches fall outside my garden and just the trunk inside so I never get any of the fruit :roll: I think it must have self seeded as I can't imagine anybody would have deliberately put it there.

That's a shame - is a neighbour getting them all? I suppose if there was any way to get them back you would have figured it out though! :lol:

I don't think it produces much fruit anyway as it's in a really bad position. Plus the neighbour has just built a huge outbuiding on one side and there are lots of trees on the other side to it's just tall and spindly and doesn't do much apart from support the birds and squirrels. At least they get something out of it. I think I've had one greengage in 4 years :roll:
