Shallots
Harvest shallots when two thirds of the green has died back. Then dry them and they should keep. If you harvest when the green is still green :-) they won't keep as long. At least, that's what I have read. It's pretty much what I do with the onions. They keep well into winter.
My shallots are still mostly green, only the tips of the leaves are turning brown so far.

There's a very old tradition that you plant shallots on the shortest day of the year, and you harvest them on the longest. My shallots needed a bit more time, though. 

If you want to be happy for a day, buy a car. If you want to be happy for a weekend, get married. If you want to be happy for a lifetime, be a gardener.
