How do i know when my shallots are ready to pull? They've already split apart, but the stalks are still green. Do i wait until that dies?

Harvest shallots when two thirds of the green has died back. Then dry them and they should keep. If you harvest when the green is still green :-) they won't keep as long. At least, that's what I have read. It's pretty much what I do with the onions. They keep well into winter.

My shallots are still mostly green, only the tips of the leaves are turning brown so far.

There's a very old tradition that you plant shallots on the shortest day of the year, and you harvest them on the longest. My shallots needed a bit more time, though. :wink:
