dates recipe anyone ?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

my husband brought me a big pack of dates back from a recent trip to the middle east. I love dates but wondered if anyone had a nice recipe that I could use some up in?

dont have a recipes but I do remember date pie from school with lashings of custard ... ooooh so good :flower:

This recipe is one of my favourites! :mrgreen:

Sticky Toffee Pudding

INGREDIENTS

Pudding:
6 oz/170g stoned dates
6 oz/170g granulated sugar
2 oz/57g butter
8 oz/227g self-raising flour
1 large egg
Half a teaspoon of bicarbonate of soda
1 teaspoon of vanilla essence

Sauce:
5 oz/142g soft dark brown sugar
3 oz/86g butter
4 tablespoons double cream

METHOD

Make the pud first, then the sauce while the pud is baking.

1. Butter your baking tin (approx 11"x7"x1.5").

2. Soak the dates in half a pint of boiling water for at least 20 minutes.

3. Cream the butter and granulated sugar thoroughly, then beat the egg into the mixture.

4. Sift the flour then stir it into the mixture with a fork.

5. Drain the dates and add the vanilla to them. Just before adding the dates to your flour mixture, add the bicarbonate of soda to the dates and stir well.

6. Tip the dates mixture into the flour mixture and mix it well to form a batter-textured mixture. Pour it into the well-buttered tin and bake in a pre-heated oven at 350F/180C for 35 minutes.

7. Mix all the sauce ingredients together stirring on a low heat until they are melted and blended.

8. As soon as the pud comes out of the oven, pour half of it over the pud and let it soak in. The pud can be served hot or cold, with the rest of the sauce poured over it when you serve it up. Also tastes good with custard!

Simple and delicious.....

400g dates
500ml expresso strength coffee
20 cardamon pod lightly crushed
2 cinnamon sticks broken in half

This is just a guide, use however much seems right, you may find that you only want them as a taste, in which case make about 1/2

Carefully stone the dates to retain the shape. Warm spices in coffee for a few minutes. Take off the heat, add the dates, cover and leave to marinate for 24hours.
Serve with mascarpone or greek yoghurt.

I once made this and forgot about it for 5 days, it was soooooo yummy when we finally ate it!

Devils on horseback - great for halloween parties - or just generally a nibble!

Marinade streaky bacon in olive oil with garlic and chilli. Then wrap around the dates and grill. I use the George Foreman as it seals them at thee same time. Yummy!

oh the sticky toffee pudding was divine. My first portion with double cream was marvellous, my second portion with custard a few hours later was delicious.
Hubby and brother think its lovely - kids not too impressed!

Anyone got a good salad recipe - I think I need to go on a diet :lol:

I'm glad you enjoyed it but I can't understand why the kids didn't. :? It's not as if it is good for you or healthy!!! :lol:

my two are not really pudding boys - unless its got icecream, jelly or chocolate in it ! They are only 3 and 5 and they watched me make the pudding - they were very suspicious of the dates .

Just going to blow a trumpet for them here - they both won 1st and second places in our local agricultural show this weekend - for decorating buns and making animals out of vegetables !!! Who needs playstations eh ?
