Mushroom Ketchup

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Mushroom Ketchup

We bought a big tray of mushrooms from the parket the other day for the bargain price of £1.50 (I know they would be cheaper if we picked them ourselves but don't know where from round here!). So I made mushroom ketchup:

3 lb mushrooms washed and roughly broken
3 oz salt
1 tsp pepper corns
1 tsp all spice - whole
1/2 level tsp powdered mace
1/2 level tsp powdered ginger
1/4 level tsp powdered cloves
1 pt vinegar
(I must confess that I used the versions of spices I had in - powdered or un powdered!!)
Put mushrooms ina bowl and sprinkle on salt, cover and leave over night.
Drain and mash with a spoon. Place in a pan with the spices and the vinegar, cover and simmer for about an hour until all the free vinegar is absorbed. Press mix thru a nylon sieve (I used the blender!) Pour into warm bottles, sterilise and seal.

Goes great with pork pies!!

I was considering trying some balsamic vinegar in next time - so if anyone beats me to it let me know how it turns out!

It is really nice with balsamic vinegar. I made some with a similar recipe recently, and balsamic was all I had left. Really sweet and very yummy.
