Beetroot cake

Beetroot cake

I made this at the weekend. It was gorgeous and very pretty. I used any old carrot cake recipe and used grated beetroot instead of carrot. Actually, I would defy anybody to grate a beetroot so I smashed it to bits in the food processor. :lol:

My recipe called for orange juice but I didn't think it would go too well so used lemon instead. On reflection, I think apple juice would have been better.

The beetroot taste was very subtle. More of a hint but then you can't really taste the carrots in carrot cake either.

Highly recommended.

Hi Zoe, I love carrot cake. That will be a great way to use beetroot. We mainly bottle it for salads. Do you reckon it would be best to use apple juice instead of orange or lemon?

Or beetroot and apple sauce pureed and dried into a fruit wrap - to die for. :)

sounds yummy - what's the recipe? My friend is growing beetroots for Africa and I get two or three every time he visits.

I've made an apple and beetroot pickle, and have made borscht yesterday. Your recipe would help getting rid of the beetroots!
