I use one nearly every day, according to the Kenwood recipe book for basic white bread it says

use dough hook, obviously

knead for 1 min and 4 mins on speed 1 until smooth. After is has done it's first rise knead again for 30-60sec

But I just knead until is looks smooth

Congratulations and welcome to the New owners of Old Kenwoods club (I have one, as a birthday present from my OH last year).

Everything we've done in it we've done by eye. We've also found that the 40 year old motor is still going strong and it's a rare occassion if we push it about 2 or 3 on the dial.

Happy using it, it's a excellent addition to ay kitchen. I love mine.
I'm increasingly of the belief that any shops situated on or near retails parks only serve to make people unhappy.

I don't have a kenwood but I have a Kitchenaid that I use all the time. As wormella says just do it by eye. Usually foccacia dough takes 5 mins, bagel dough takes 10 -15, I always interfere with it too... I like the satisfaction of kneading a bit by hand (It's like a stress ball)

Basicly use it on its slowest speed until the dough comes away from the bowl in a nice ball.

And enjoy!
