jack-by-the-hedge

jack-by-the-hedge is also know as wild garlic mustard. I founds we have lots growing.. er.. by the hedge would you believe - raw it smells and tastes garlicy - I looked it up and its edible - I got very excited - free food! - picked a load of leaves.. cooked - and its nice.. then a nasty bitter aftertaste. ok if you are into dandylions and chichory.. but I'm not - anyone else try this one? am i doing something wrong?

I haven't tried cooking it, and only add a few leaves to a salad because I find it bitter.

I prefer the ramsons or wild garlic myself. I don't like bitter tastes at all.

How did you cook it Red?

Shirlz - I washed sliced and sweated the jack-by-the-hedge in a pan with some leeks and a bit of butter. waste of a good leek and some butter.

we had fish and chips for supper that night.

I think it is best just left to do its own thing - look pretty in flower right at the moment!

Sadly not everything that is edible is tasty.

well teh good think about jack-by-the-hedge is that the orange tip butterfly lavae feeds on it, and the adult likes honesty plants. and that no doubt is why we have alot of orange tips

I have seen a few Orange Tips around. Plenty of Jack by the Hedge for them, but I don't have any Honesty. Must find some!

It is strange that sometimes people go on about eating wild foods, then when you do, they are yucky. I have a lot of sorrel growing on the campus near me and tried a teeny bit, and it burnt my mouth

. I have no idea why everyone goes on about it.

oh dear .. looks like I am on my own then ...cuss I like it ...

I have made a pesto with it and added a few dandylion leaves and pinenuts..also used it with nettles and cooked it like spinich...

I like sorrel too! We had a lovely sorrel soup with hardboiled eggs in it!
