Fruit pies

Whenever i make fruit pies, i end up with layers that go:

Pastry
Air
Air
Air
Fruit
Pastry

How do i stop the air?

Yep, i cut a cross in the top, i tried making the fruit into a puree type thing, and that didn't work, then i tried not putting any water in with it - that didn't work either.

Am i forever destined to be bad at making fruit pies?!

The fruit always seems to dry out and shrink. Is theere any way of making it stay nice (mainly apples - my dads an apple pie fiend!)?
