leek and pasta soup

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

leek and pasta soup

I have just made a batch of leek and pasta soup and it is scrummy thought i would share the receipe with you all.

2 to 3 large leeks
2 tablespoons of butter
4oz pasta shapes
3 oz cheese
1.5 pints of vegetable or chicken stock

peel and finely chop the leeks, and add then to a large saucepan with the butter, gently cook them until soft but not browned
add the stock bring to the boil and then simmer for 30 mins.
stirring occasionally

add the pasta, season with salt and pepper and cook for another 15 mins or until the pasta is cooked stir in the cheese and stir in

you could if you wanted to exchange the cheese for single cream.

it is very filling and really nice to eat hope you all enjoy it

You can use any sort of pasta shapes. the tube shaped one work better
