For Shirley - Dried Apricot Jam recipe...at last!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

For Shirley - Dried Apricot Jam recipe...at last!

It's taken an age to re-find this recipe - sorry :oops:

Better late than never though :wink:

1lb dried apricots
3 pints water
juice of 1 lemon
3 lbs sugar

Soak the apricots in the water for 24hrs - DO NOT DISCARD THE WATER!. Transfer to a large pan and add the lemon juice. Bring to the boil and then simmer for 30mins (or until the apricots are soft) stirring regularly. Add the sugar and stir until dissolved. Boil rapidly until setting point is reached, stirring frequently as this jam tends to stick!

Makes approx 5lb.
