Beetroot Puree - great salad condiment!

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Beetroot Puree - great salad condiment!

Beetroot Puree

2 Beets (2-3 inch diameter)
1/2 cup apple or orange juice
2 TBS. Lemon juice
2 teaspoon cider vinegar
2 teaspoon honey
salt & pepper

Boil beets until tender about 20-30 minutes.. when cool enough to handle rub off skins and puree in a blender with the rest of the ingredients. Adjust consistency with the amount of juice added.

Great as a condiment with potato salads, green salads, stuffed squash and a myriad of other delish dishes. Freezes well too.

ay nev.. well.. I made a double batch and put half in the freezer. Took us 5 days to get through the first batch... and it was fresh and lovely to the last dollop. Just finished the batch out of the freezer... took about a week.. I would have to say that it freezes well and will last at the least a week in the fridge.

yes.. very purple food! I love it!
