experimental jacket potato topping

After catching a bit of kieth floyyd the other day I decided to copy one of his recipes for a sauce to put on my jacket spud.

Unfortuantley I forgot half of what he said and sort of made it up as I went along, taste alright though.

First I put some vinegar in a frying pan and then threw in some chopped onion, garlic and a bay leaf. Then added a drizzle of oil. next some mushrooms and cream and finally some cheese.

Tasted ok and made a change from the usual cheese on its own.

I've been experimenting a lot with vinegar, ever since a caught a bit of Rick steins programme one day.
He was making some kind of canelloni and leek dish. The stuffed canelloni was layered between a tomato sauce on the bottom and cheese on the top. When he was making the tomato sauce he went on about finishing it off with a drop of vinegar and sugar reduction.
I always put a bit of sugar in a HM tomato sauce, it helps bring out the flavour of the tomato, but now I quite often add a couple of splashes of balsamic.
Even put some balsamic into my pumpkin soup the other day.

It was the frying with vinegar that interested me and so tried to copy. I had never heard of that before. I think a dash of sugar was in Floyds orignal recipe and something I forgot, will have to do some more experimenting.

Will have a go at putting some in with my butternut squash soup next time I make a batch and see what that is like too.
