been busy again today

I have again today, been very very busy making chutney, and pickling onions

I had some left over tomatoes and some onions and being someone who hates waste, i decided to turn it into a chutney, and adding vinegar, sugar, garlic, mustard, cayenne pepper, and curry powder to it has given it a bit of a kick.

onions went well too today, and also have a large batch of pumpkin left, so i made a few pumpkin scones, and tomorrow pumpkin and carrot soup.

if anyone wants the receipes for these i will happily post them for you

Yes please Maggie... I'd love to see the recipes.

I've bought some shallots (yes I know you are supposed to grow your own.. but I didn't... so this is second best) and want to pickle them in a hot and spicy vinegar.

finished off the 4kg of pickling onions I had today. Done a couple of jars with chillis in for extra kick!

receipe for anyone that wants it

tomato and onion chutney
24 red tomatoes - chopped
1oz salt
2.2lb sugar
1 teaspoon cayenne pepper
2 tablespoons curry powder
35 floz of malt vinegar
3 tablespoons of mustard powder
6 tablespoons of plain flour.

place the tomatoes. onions and salt into a large saucepan place a plate or lid on top and leave for 24 hours

next day prepare the jars for storing them
then strain of any excess liquid caused by the tomatoes then add the sugar and vinegar bring this to the boil until the onions are tender and the sugar dissolved then add the mustard powder, the curry powder and the cayenne stir this in then sprinkle over the flour and stir that in too

reduce the heat and allow to simmer until thickened you can at this point add a little more vinegar if you want too

bottle the chutney into warm jars. :angry4: :wav:

i got the receipe fcr pumpkins scones off this site go into the front page, scroll down and on the right hand side is an entry called Gills pumpkin receipes you will find it there with a few others

they are really nice, and very easy to make too
