Squash Pie

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Squash Pie

Just thought I'd share this one as it worked really well.

We used and onion squash but I suspect most would work well.

Scoop out the squash and place 3+ cloves of garlic in it with a little butter and roast for roughly half an hour.

While the squash is roasting make some shortcrust pastry with pepper and basil mixed in. Chop 2 medium carrots (we used purple ones for the nutty taste, if you are using orange ones I guess you could add some nuts too) a large courgette and sweat some sliced onions and fry up 8 slices of bacon (or not if you are a veggie/don't eat bacon).

Line a pie dish with the pastry.

Remove the garlic from the roast squash, mash it and mix it with the onions.

Scoop out the roast squash and make layers in the pastry of squash, bacon, mixed up veg, squash, bacon, veg, squash.

Pop the pie lid on and bake in for 30 minutes at 190'C
