Potato & Leek Layer Bake

Another easy but tasty dish.

1lb and half potatoes
Knob of butter
Little milk.
2 large leeks sliced.
Cheese Grated (you choose how much ~ I like quite a bit)
Salt and pepper

Cut potatoes up into small chunks and steam or boil them until soft. Mash with the butter and milk. Season with salt and pepper to taste.

Steam the leeks (over the spud pan if you want to save energy and washing up!)

Butter a oven proof dish and then put a layer of leeks, a layer of spuds, leeks and spuds again. Top with grated cheese and bake in the oven Gas Mark 5 for about 30 mins until cheese is nice and bubbly.

You can serve this by itself as a veggie meal with good old baked beans or with a salad. Or as a side dish with bangers and beans.
If in doubt ~ use a hammer!

Looks interesting Shiney, but we are not big on leeks. I wonder if you substitute something else?

I some times sustitute leeks for onions in things.

Yeah ~ you could use any veg really with the spuds. I am always up for an experimental meal! With a cheese topping, it always goes down well.

Onions would be good, lightly sauteed in olive oil or good old butter. I should be big as a house using butter in my cooking but it tastes so good. The ol' cholestrol level isn't too bad either. :lol:

Brocolli might be nice, or cauliflower, but with the onions as well. Might as well make many layers! I for one love leeks so when my spuds and leeks are ready I shall have a go at this.
