flavoured vinegar

Hi

I would like to start making flavoured vinegar as i love them as a salad dressing and adding to dishes. I found a vinegar book at my parents and it has various recipes that basically involve adding flavouring such as lemon juice/mint/raspberries etc to a bottle and then top up with white wine and leave in the dark for 10 days. My query is does the wine stay alcoholic? I don't really want to be pouring lemon vinegar over my salad if it is still alcoholic! Any ideas?

That is what i thought the recipe should be but it definately says white wine - maybe the reader is to assume that they mean white wine vinegar!
