What can I plant now in my empty veggie beds

As I've recently harvested so many veggies I have cleared and forked through beds that are just waiting for something. Are there any seeds I can plant at this time of year? I'm in Brittany and the weather is much warmer at the moment than in the UK. Nothing too weird and wonderful, I'm a simple girl really!

Lettuce love this time of year, you can have a crop in a few weeks. They last longer before bolting if it's a little cooler. Spring cabbage goes in now, and don't forget to keep some room for over wintering onions and garlic. Broad beans go in some time in autumn also.

I've planted some lettuce/salad leaves that I'd sown seed for and I put in some carrot and beetroot seed yesterday in the vain hope that it might germinate in the heat and I've watered it well when sown and this morning. I have loads of veggie seeds but don't want to waste them on things that might not grow in time.

spring onions (esp white lisbon winter variety which can be sown up to the end of October and cloched over winter) oriental saladini, spinach

Try some Green Manure if you are stuck, Vetch or clover or something will give the soil a real boost and keep the weeds at bay?

I'm hopeless, I should have said some of the beds are in the polytunnel so obviously the season is extended.
