Here's one I use: http://pickyourown.org/horseradishsauce.htm but I find that the jars don't last much more than a couple of months as it says on the bottom of the recipe.

I don't have a recipe as such and I've not made it in a long time so this is from memory

The simplest thing to do is thoroughly wash the root then peel it - outside if you don't want to cry like a baby throughout the whole process

Mince it finely, or blitz in a food processor, add salt (can't remember how much, and leave it to lose some moisture draining in a tea towel in a colander. Rinse and wring dryish. Then put into jar and cover with vinegar, stirring/shaking to remove any air.
That's it - keeps for ages. You can add it to whatever, it tastes great as is or mix with cream, yoghurt, oil etc.
I can't see any reason why you couldn't lacto-ferment it - as above to the blitzing stage then put it in a jar with any juices, a couple of tbsp of salt and water to cover, if needed. Leave for 2-3 days to ferment.

Or you could store the roots (as with any other winter root,sand in box, clamp etc,maybe even freeze,which might intensify the flavour as with parsnips),then make fresh as you use up the jar....that doesn't exactly scan,hope it's decipherable.
