Beets, Red leaf Romaine lettuce, Basil, Celery, Parsley, Swiss Chard, Collards, and Pak Choy all fresh picked from the garden were made into juice and pressure canned at 15 PSI for 15 minutes for long term storage at room temperature. You will not find this in a supermarket or in the Canadian Food Guide. Clear annotated pictures depict the process.

A yard full of edible food and what to do. A first I started with the highly desirable, like the fruits, now I am just utilize what is available. For the Winter season I need about 300 litres of various canned goods.

Few people use the stuff they preserve, certainly in the vegetable line. Once I was helping a woman move and she had jars and jars of inedible canned goods some five years old. All mush as is most canned vegetable products. At least my treatment is palatable, wide variety, and quick. Probably a more drinkable soup than juice, hopefully with all the nutrients still available. For example, compare my canned tomato juice to the commercial supermarket stuff, mine wins hands down. The present produce in season, mostly vegetables, is not the most desirable, but things will improve as the season advances, with all the various fruits in abundance.

Crusade, maybe you are right.
