Beetroot brownies :)

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Beetroot brownies :)

Excuse the low quality mobile photo, but it tastes so good! Made it for a 1940s style picnic we're having tomorrow for my hen do. Also have a courgette, carrot and orange cake cooking at the moment.

500g whole raw beetroot (3-4 medium beets)
100g unsalted butter , plus extra for the tin
200g bar plain chocolate (70% cocoa)
1 tsp vanilla extract
250g golden caster sugar
3 eggs
100g plain flour
25g cocoa powder

Warm the oven to 180, as it's warming, pop the chocolate and butter into a casserole dish and pop in the oven to melt. You can melt them however you like, but I was making use of the oven whilst it was warming.

Grate the cooked beetroot and add to the chocolate and butter.

In another dish, whip the eggs and sugar together until they become thick and creamy. Add the vanilla extract, then fold in the beetroot mixture.

Sieve the flour and cocoa powder. Fold that into the mixture. Pop in a greased tin and cook for 40 minutes at 180.

Serve warm with cream and enjoy! Not sure what it's like cold yet, but guessing pretty good. :cheers:

Looks gorgeous. Have a lovely hen do - love the theme, dress to match I hope. At least in the 40s they didn't have pink fluffy stetsons! :roll: :lol: :cheers: :cheers: :cheers:

Haha, no, I don't think I could face *that* kind of hen do, just a lovely day out at our local castle where they're holding a 40s weekend. I fear my dress is more 50s than 40s though, but going for victory rolls, if I can do them, and hairnet.

i made these recently so i thought i'd report back. number one, do not tell people you put beetroot in them as whomsoever i told kind of stopped munching. i ended up eating most of it, so yes, delicious, but i am a chocaholic, and despite the fact they needed i think another 10 mins to bake through as were a little heavy. also, i would try a finer side on the grater next time.

Everyone knew before they bit into it, so the response I got was more of surprise at how nice they are. Our other friend loved them because they look like Klingon Blood Pie :)

Can't say I found them heavy, but there was lots of whipping beforehand and my oven does heat up pretty well. The one change I would make is I'd probably add some choc chips or some nuts next time I make them.
