I use this as a side-dish with curries & my hubby loves it! U can make it as spicy as u like or as tame and make larger or smaller quantities. The more spuds u add the thicker the sauce gets especially if the spuds are soft and break down as you stir.
1/2 cauliflower
couple of spuds - boiled and in pieces
large and small tin of tomatoes (I find this is enuf to completely cover everything in the pan)
onions
chillis
various spices - cumin seeds, cumin powder, chilli powder, curry powder - in quantities to suit taste.
Fry onions, chillis and spices in a little oil. Add the cauli, potatoes & tomatoes and cook until cauli cooked to your preference of hardness. U can add more spices along the way if its not hot enuf.
You could cook the cauli first with the pots if prefered, then u only have to heat the sauce up.
Its a really versatile 'curry', great with chop & chips or I have even used the leftover with mince as a bolognaise sauce. It freezes well too, ready for the next curry!

I make a Cauliflower thing by popping mustard seeds and toasted cumin seeds (i.e. dry frying them), adding oil and boiled cauliflower and wild garlic or other rough chopped leaf.
I do like the cauli's (get loads in the veg box in cauli season), but they don't go down to well in company.
