Salad Dressings and White Sauces, please.

As I have a lot of salad stuff ATM, would anyone like to suggest some salad dressing recipies, please?

Similarly, as a bit of white sauce goes well with courgettes, and later, marrows, cauliflowers, etc, has anyone any favourites for this?

Salad dressing? I normally use olive oil and balsamic vinegar - sometimes whisked together but often just drizzled on separately in small quantities. If I'm getting fancy, I'll make a mayonnaise (do you need directions for that) and perhaps herb it up with something from the garden (sorrel seems to work well for that purpose, with it's lemony edge).

For a white sauce, I generally make a roux (melt butter and stir in flour) and then add milk, stirring and gently heating, to produce a bechamel. Again, that can easily be developed by adding some other ingredients - for example, cheese or honey and mustard.

I make a bechamel sauce, the same as Wulf has explained, then add a strong blue cheese to it. Its lovely with veg thats quite bland like courgettes & cauli.

Hi,

For the salad dressing .. I usually do a Vinaigrette.

A good spoon of mustard
A couple of spoons of oil
Some vinegar
Salt + Pepper

Stirr it all and that's you sorted .. you can use any oil and vinegar ....
