What are you preserving?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Maggie - I love the sound of the vegan lemon curd, please can we have the recipe? Does it also mean it keeps longer without the eggs?

Fran, I looked for the recipe I used last night and couldn't find it anywhere - I can't believe I haven't saved it anywhere :shock:

I've had a look online and from memory this looks pretty much like it. Anything in [] are bits I can definitely remember

2Ib marrow/pumpkin
2Ib sugar
3 lemons - zest and juice
4oz butter - I used Stork marg - the solid type which is vegan

Cook the squash flesh [with just a splash of water] until tender, then allow to strain through a sieve to remove as much water as possible . Mash and beat until a smooth paste is formed (I used my hand blender). Put the squash into a large pan.
Add the zest and juice of the lemons to the cooked squash.
Add the sugar and slowly warm until all the sugar has completely dissolved.
Once dissolved add the butter and continue to cook slowly until this has melted.
Now bring up to a simmer and stir until a thick smooth creamy paste is formed.
Bottle in sterile jars in the usual way. It is very nice indeed! [I concur :lol: ]

Forgot to add I don't know how long it will keep - it's the first time I've made it! Some that was left over was in an open bowl in the fridge for over a week before we finished it and was fine.

Im making marrow chutney. Im making marrow and sultana and marrow and raisin.Ive made several jars.
Ive got some pumpkins ready for halloween so will be making a pumpkin and raisin chutney in a couple of weeks too.

No probs fran, i bastardized the marrow chutney recipe from 'jampacked' jam and chutney book.

3lb of pumpkin flesh, 1lb onions,1lb tomatoes,4-6oz raisins,1 pint sarsons pickling vinegar, 2 tsps ground ginger, 2 tsp black pepper, 2 tbs salt, 750g brown sugar.
Chop marrow up into small chunks, peel and chop onions, peel & slice toms.
Put in pan with half vinegar and simmer until marrow is soft and crushable.
Add ginger, salt and pepper and simmer for another 15 mins.
Stir in sugar, raisins and rest of vinegar and keep simmering until ready.

Enjoy! should come in handy for halloween!

Sadly your not just down the road :icon_smile:. All is not lost, I have been given 7kg of pears today so I am going to give it a go with those.

I am just boiling up medlars to make syrup, they make the house smell lovely.

I made french apple tart with some of the apple butter, it was really really special, a bloomin marvelous pudding.

Sounds like a hit then.

Made another batch of apple butter yesterday with soft brown sugar instead of white granulated. Tastes like toffee apples. Can't be good for you...

Oh god I have no time for preserving as I am just harvesting all the time!!!!!

We have so many apples this year it's just crazy. One day I'll get round to making loads of stewed apple, but can't do that until I've dealt with all the frozen tomatoes and got them sauced and bottled to make some room in the freezer. Still got 7kg blackcurrants to deal with and 3kg of redcurrants too........

Still picking and eating strawbs and raspberries, as for the conference pears the tiny tree must have had hundreds of fruit on it, but thankfully a lot dropped whilst we were away and I did tell the neighbours to take what they could!

I think I might try pumpkin jam this year which I have tasted but never made before.

So come December I might have finished my garden chores and have time for jam and chutney making! I feel like this :shaking: :shaking: :shaking: all the time. :?
