gluts
I have alot of courgettes at the moment and also pak choi.
Any ideas what can be done with them? I always use courgette in pasta, it would be nice to use it some other ways.
Does anyone know if you can preserve the pak choi?

Courgettes are a good ingredient for ratatatatatatatatatatatatouille - which can easily be frozen. They can also be used to make cakes, or can be used as an ingredient in chutney. You could make wine from them but I wouldn't recommend that unless you like insipid wine. Or you could lightly saute them in oil and then freeze them (much better than blanching them).
Or, like a lot of us on here, you could surreptitiously compost a few of them
As for pak choi, I have no idea. I bet someone will, though.

There a loads of recipes on here to use up courgettes in all sorts of ways - put courgette in the search box (top right hand corner) and you'll see this topic has arisen quite regularly!
I don't know about pak choi but would it be suitable to make something like sauerkraut or kimchi?

Cakes cakes and more cakes, both savoury and sweet. I'm making one today with cardamom in it.
There's a fairly recent courgette thread with a load of recipes in it. I can't cope with keep repeating my recipes everywhere......

Courgette and tarragon soup - I made it last night and it was lovely.
1. Saute chopped courgettes in butter
2. Add dried or fresh tarragon in generous quantities and saute a little longer.
3. Add enough chicken or veg stock to just cover and simmer for 15 mins
4. Blitz until smooth, add some milk and season
5. Re-heat and scoff!
