I made these yesterday - found from a random google search :iconbiggrin: and they are so delicious I'm telling everyone about them!

I didn't bother about the icing and just grated the beetroot and chopped up crystallised ginger which is what we can get from the Asian shop here - not even sure really what stem ginger is but guess it's similar only in syrup.

Again like courgette cake and choc beetroot brownies you don't notice the 'veg' in it at all but I guess it adds to the richness and colour.

Oh yum. They sound delicious.

My neighbours gave me a bunch of beetroot last week so I substituted some diced beetroot for the mixed peel in a standard fruitcake recipe. Yum.

As far as I know stem ginger is ginger that hasn't been preserved. Otherwise known as fresh ginger or sometimes root ginger.

I'm going to give these a go on the weekend.

Oh thanks - well I've almost run out of crystalised ginger but have fresh (ish!) ginger in the fridge - fresh ginger in cakes makes a HUGE difference - will try that next time then! :thumbright:

ah - no maybe not - just googled stem ginger and look at the images

Think it is the preserved ginger in syrup as it's a UK recipe and I think that's how you get it there. That sort of ginger is not available in France, but the stuff I used was fine. Really I don't think it matters what you use so long as there is a good gingery taste!

Thanks Maggie! However the only place I can get fresh ginger (as opposed to really old dried out 'fresh' ginger) is the Asian store where I have to go to get the crystallised ginger. :iconbiggrin:
