What to do with cabbage
Cabbage is one of those things that normally sits on the edge of your plate but we are going to pick a particularly nice looking cabbage this week, so does anyone have any good recipes so that we get a really nice meal out of it (preferably vegetarian).

Ah, my suggestions would involve goose fat and bacon and full fat cheese!

I've got quite a few but this one is lovely. And simple.
Pasta with Slowly Cooked Onions, Cabbage, Parmesan and Pine Nuts
Servings: 4
25 g / 1 oz butter
15 ml / 1 tbsp olive oil
500 g / 1.25lb onions, halved and thinly sliced
5-10 ml / 1-2 tsp balsamic vinegar
400-500 g / 14 oz cavolo nero, spring greens, kale, brussels sprout tops, or other cabbage, shredded
400-500 / 14-20 oz pasta
75 g / 3 oz freshly grated Parmesan cheese
50 g / 2 oz pine nuts, toasted
salt and pepper
1. Heat the butter and oil together in a large pan; add the onions;
cover and cook gently, stirring occasionally, for about 20 mins, until
very soft.
2. Uncover and continue to cook gently until golden yellow; add the
balsamic vinegar and season well; then cook for a further 1-2 mins;
set aside.
3. Blanch the greens until just tender; drain well then add to the
onions; cook over a low heat for 3-4 mins.
4. Cook the pasta until just tender; drain, then add to the pan of
onions and greens; toss thoroughly.
5. Season well and stir in half the Parmesan; sprinkle the pine nuts
and remaining Parmesan over the top; serve immediately.

Green Aura that does sound delicious and a fitting tribute to our glorious cabbage.
The most memorable cabbage dish I have ever had was choucroute, a french version of sauerkraut prepared by a french country woman, all I know it was made with cabbage, various frankfurter type sausages and (and this was to feed 6 people) 3 bottles of white wine !!!

In search of what to do with cabbage, we came across this very interesting and I thought unique approach. Basically it is stuffing a cabbage, a whole cabbage. Ours was with a mushroom mix with parika and cream cheese, onions and things like that, but it can be anything you might use and wrap with cabbage leaves. The unique thing was to hold the cabbage upside down and cut the stalk out of the centre, then ease the leaves open, keeping the cabbage whole, filling with your mixture. Cook in the oven and present bottom side up so that you see the structure of the cabbage with the filling between the leaves.

We always make our own coleslaw with white cabbage but suspect you mean the green variety!

My favourite cabbage recipe is http://www.jamieoliver.com/recipes/othe ... -with-sage - not vegetarian but it might work with veg stock and without the bacon and anchovies. The cheese and bread go all gorgeous and squishy and melty :)

mmm they all sound yummy, i like to use cabbage in stir-frys or a recipe my farther in law taught me is to cook rice in stock and then add cabbage for the last 5 minutes with a load of black pepper which is really nice
, i also like to fry/steam fish fillets on a bed of cabbage and shredded carrot but cant think of a veggie that this would work with.
