Thought it was about time our wine guru got some of the recognition he deserves with this recipe for Fireweed, Himalayan balsam and bramble tip wine
To try and prememt some questions.
Fireweed Epilobium angustifolium AKA London weed or Rosebay willowherb
Himalayan balsam -Impatiens glandulifera AKA Policemans helmet. Some say that it is poisionous but this has no basis in truth. Of the 100's I have fed this to only one has ever reacted and this can be true of oranges, kiwi fruits ect. The reaction was a very mild prickly throat which disapated after a few minutes.
Always, always steralize everthing that touches the must.
The flowers are for colour so don't stress too much about how many you are using.
