What can I do with used beetroot pickling vinegar?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

What can I do with used beetroot pickling vinegar?

Last night I finished a jar of delicious home-made pickled beetroot, and was just about to chuck the remaining half-jar of deep purple beetrooty vinegar down the sink when I thought "There's got to be something I can do with this." Any suggestions?

Leave it in the jar - add boiled eggs to the jar. Then you get purple pickled eggs that have absorbed some of the beetroot taste.

Have you no more beetroot to pickle? 8))

Put it in vinegar sprinkler for next time you have chips?

Put it on the compost heap?

actually that's not a mental idea, having the vinegar in it'd already have the mordent lol. heat it up, shove in some damp cloths, leave for a while....
