G'day all, just thought I'd share this very easy recipe for when you've run out of eggs, butter, milk or all three. I made it many a time as a school lunch filler when the boys were growing up. Am sure many of you have a similar version but for those who don't here goes:

1 cup mixed dried fruit
1 cup hot strong black tea
1 scant cup sugar
2 cups SR flour

Mix dried fruit, sugar and tea in a bowl, stir and leave to cool for about an hour(or overnight). Mix in flour, pour into greased loaf tin and bake in moderate oven for 50 mins-1hr.

I would usually add 1/4 teaspoon each cinnamon and nutmeg, but is fine without.

Enjoy warm or cold spread with butter.

I found a similar recipe in a book on various breads - they call it "overnight tea bread". It does have an egg in it (but I've made it without for a vegan friend, too); and I generally leave out the sugar, because I think it's sweet enough with all that fruit in it! Apart from that, very tasty, although it's so "frugal".

Nice one, was very tasty.

Dug out a recipe book my grandma threw together and found the exact same thing in 40's handwrighting, must have been an old favourite back then too. :)

I tried this a few days ago.

Afraid I found it far, far too sweet. Maybe my scant cup of sugar wasn't scant enough, but I think I'd go with Ina's suggestion of leaving out the sugar altogether.
