Required urgently
Hi Everyone,
A request here for your knowlege and help.
Does anyone at all have or know of a recipe for Elderflower Ale. I know this is a real Ale for I had it once or twice (or more) in a pub in Llanfihangel Glyn Myrfyr, so it has been made and, as it was gorgeous, I want to make some.

It sounds wonderful.... but haven't got a recipe sorry....
Did find this really exciting e-book that you can either read online or download for free - it has a recipe for elderBERRY ale... which I've tried drinking and enjoyed.
To make it Elder Ale_:--Take ten bushels of malt to a hogshead, then
put two bushels of elder-berries pickt from the stalks into a pot or
earthen pan, and set it in a pot of boiling water till the berries
swell, then strain it out and put the juice into the guile-fat, and
beat it often in, and so order it as the common way of brewing.
It's VERY old and has recipes for roasted swan and cock ale... too!! The mind boggles...
_To make Cock Ale_:--Take ten gallons of ale, and a large cock, the
older the better, parboil the cock, flea him, and stamp him in a stone
mortar till his bones are broken, (you must craw and gut him when you
flea him) put the cock into two quarts of sack, and put to it three
pounds of raisins of the sun stoned, some blades of mace, and a few
cloves; put all these into a canvas bag, and a little before you find
the ale has done working, put the ale and bag together into a vessel;
in a week or nine days' time bottle it up, fill the bottles but just
above the necks, and leave the same time to ripen as other ale.
Sounds awful eh?!

I would willingly stop after the first bit of the instructions - take 10 gallons of ale.

This mightbe easier to follow
Elderflower Beer
Ingredients:
0.5 litre (one pint) of elder flowers (not pressed down)
4.5 litres (eight pints) of water
One lemon
454g (1lb) of sugar
Brewers' yeast and nutrient2
Method:
While you're bringing the water to the boil, squeeze the lemon juice into a bowl with the elder florets and sugar. Pour the boiling water over them, cover them closely and allow the mixture to infuse for two hours. Stir in the yeast and ferment in a warm room for one week before straining into a screw-topped flagon. Store in a cool place for a week, after which the beer will be ready for drinking.
Elderflower beer is a 'mock beer'; true beers are made from malt and hops.
I found it tucked away on theBBC website.
It actually looks pretty easy to make too.

Its not edecation but senility in my case, Damn it, I still remeber Exercise Books have ther Aduvoirporous Systems on the back Cover
Also, my thanks to both yourself and Ray, who found the Recipe in one of J.J.Berry's books, for all home brewers his book entitled,
First Steps in Wine Making,
Is still being produced and has many excellent recipes that are easy to follow.
