Vinegars

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I have looked back at 10 pages of recipes and a search .. but no luck ... I want to make some fruit vinegar as a gift ... found some recipes on the net but they all recommend keeping them in the fridge because of .."vinegar mother" and "eels" :shaking:

So is there any voices of experience please :icon_smile:

I've not made any fruit vinegars myself -- but none of my recipe books say anything about needing to keep in the fridge. A good quality vinegar is needed as a base tho - white wine vinegar is recommended.

To make about 16 fl oz which should keep 3-6 months:

250 gm (9 oz) blackberries, raspberries or blackcurrants either fresh or thawed if frozen
60 gm (2 oz) caster sugar
400 ml (14 fl oz) white wine vinegar

Heat berries & sugar gently untill juices run & sugar has dissolved
Transfer to glass jug or bowl 7 add vinegar. Cover with clingfilm & leave to stand at least one week, preferrably 3 weeks.
Strain into clean bottle.
