Many years ago an ex-colleague of mine went to work for a fruit-and-veg wholesaler. They had bought a computer-controlled 3-storey fridge, and reputedly could keep any veg fresh for a LOT longer than you might think just be keeping it at the optimum temperature for that fruit or veg. But he didn't know the details!

Following on from my potato storage disaster thread - does anyone know if such information is in the public domain?

There is an interesting book on storage
Root Cellaring Interestingly it is by Michael Buble (who I hadnt even heard of til the recent TV ads) but I don't think its the same one :iconbiggrin: Edit Sorry Michael Bubel :iconbiggrin: :iconbiggrin:

There are loads of plans for making your own root cellar, everything from old freezers to a dustbin, on Google. And clamps etc :iconbiggrin:

"Root Cellaring" is a great book, even if you aren't planning your own root cellar, because it includes lots of great information on the optimum storage conditions for just about every vegetable you're likely to encounter.
