Usually bread is made by kneading the dough, which takes a bit of effort, so people tend to buy commercial bread. The method shown makes a nice tasting bread, quickly and effortlessly.
Procedure: Three cups of flower, with a table spoon of quick yeast and about two cups of water. Mix together, and let rise in a pot for about four hours. Place in an oiled oven cooking pot and let rise again for about two hours. Cook at 450 F for 30 minutes with lid on, then another 20 minute with lid off. let cool before cutting, and enjoy.
Modification possible are: Add a teaspoon of sugar, add teaspoon of salt if desired, add a cup of whole wheat flower, add a tablespoon of some gluten.

If you want bread without kneading try making scones - I posted a thread about cheese and chilli scones somewhere on site - or Irish soda bread.
1lb flour
2 tsps baking powder
sour milk to mix (or milk and a little lemon juice)
1 tsp salt
Preheat the oven to 425F Gas mk7
Sieve all dry ingredients into mixing bowl
Add enough milk to form a sticky dough
Shape into a round, place on a floured baking tray and cut a deep cross in the top. (This helps the inside cook properly)
Bake for 30 minutes turning occasionally
Check base for hollow sound after another 15 mins
Lovely fresh but goes stale quickly. When it has, fry slices in bacon fat despite conscience screaming about cholesterol. My Fenian Granny told me that soda bread had to be made because possession of yeast was once a capital offence in Western Ireland. (Anyone confirm this?)

I recently got into the no knead method (avid sourdough fan here) after having been kneading for ....oh...over 10 years.
Its an revelation really.
you mix up the flours, water, yeast (or sourdough), roughly....let stand half hour.
then add the salt, mix well.
do the first stretch and fold as below:
pat the dough into an rectangle, fold one short side to the middle, then the other one on top of that.
turn, this time you do it again from the new two short sides.
put in bowl.
let stand one hour in warm place.
now depending whether you use yeast or sourdough.
for two to three hours you repeat the folding each hour, patting it into rectangle and fold etc.
I do this four times with the sourdough (normally would knead and let it proof four hours...)
then shape, let rise till doubled, bake.
see how you like it.
this way, you can use MUCH MORE dough and make more loaves at one time without the work.
