Lemon cucumbers

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Lemon cucumbers

Okay, my son bought a pack of lemon cucumber seeds from the internet! He grew the seedlings and gave them to us for the allotment. After a few deaths (AAH!!) we have now harvested lots of round prickly yellow cucmbers! Now what do I do with them?? Do I peel them and just treat them a normal cues?? :dontknow: The packet said that the skins were much more digestible than ordinary cues...BUT they are prickly!! Dont like pickled veg much and cannot think of anything else except salads! HELP!! :shock:

edited; just done a better google search and found the prickles rub off! :cheers: but recipes not that inspiring..any ideas anyone??

If you were nearer I would give you some Sue! There are just so many!! A couple raw would be ok but I have enough to eat daily for a few weeks! Wonder how long they keep?

How interesting - I had to google them as I've never heard of them. I guess you use them just like ..... cucumber! :mrgreen: Jam, pickle, relish, salads.... the list is endless. I've done all that and got sick of it so now my hens eat the excess ones that we can't get through - only a few left in the fridge now then back to shop bought. :( If they are like ordinary green outdoor cucumbers they will last a few weeks in the fridge.

Guess I will have to get chickens then!! :lol: :lol: or do what I did with the excess marrowettes and put them in a box at the gate for people to take away! Despite all the many recipes I lost the will after many weeks of eating, pickling and baking! :( No tenacity!

Wel done you for getting such a good harvest. I have tried two years on the run and failed dismally. They start off great, really healthy and strong and then the main stalk seems to rot half way up and they die.
Any advice gratefully received as although I said I wouldnt try them again, I am sure come spring time, I probably will! :flower:

Hi...ours were started indoors and hardened off very slowly...the first ones shot up then died when about six inches tall...seemed to have very weak stalks?? We finally planted a couple of plants, about eight inches tall, in the allotment in late June and left them to it!! They seemed to decide to grow despite looking pretty weedy!! :roll: The fruits have grown and spread next door into the Romana broccoli (right name??)(they grew leaves only no heads) and seem to get enough support from them! At least they were good for something!! :mrgreen: We have eaten most of the cucumbers and they keep quite well. Have another go...maybe you were too kind to them!! :lol:
