You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.
We are making up batches of tomato chutney (Red and Green) and we are going to be storing it in Le-Parfait jars.
Now we are sterilizing the jars in the oven and my question is can we leave the rubber seals on them or do we need to remove them whilst the jars are in the oven?

Remove them or they will melt.
They need to be soaked in a basin of boiling water to sterilise/soften them and put back on the lids just before filling the jars.
A bit fiddly and potentially finger burning job

We've had a thread on this before...... I put mine in the oven to sterilise them at 120C and they do not melt but yes whatever method you sterilise them with they will always be a pig to get on whilst wearing oven mitts (or not!).

That's fine if you have an oven with an accurate thermostat.
Mine is an old gas oven and marked in "regulo" numbers, so could be anywhere between 120C and 220C.
Glass jars don't mind but rubber might.

I thought it was only me that did things like that!! I put a frying pan into the oven (they all do that on TV..dont they??) The handle looked a bit like your lids!
I have just finished trying to convince OH that the "chargrilled" baby carrots I served with lunch were deliberate! He did not believe me!

I was looking for a picture of a product I'm sure I saw a while back - a glove like a marigold but made from silicone so it had heat resistance. I thought something like that would be ideal for jam making etc. Sadly, can't find it now so I either imagined it or it's gone out of production.

Something like that (the missing photo but I know what you mean) would be good for screwing lids on tightly when hot, however I find I'm a complete and utter klutz with oven mitts on and last year knocked over several jars of hot bramble jelly (amusing to clear up when cool!!!). Now I put the lids on my jams and chutneys one at a time so there are no open ones for me to knock over.
