Hmm... what to do with Blackcurrants...

We bought some reduced to clear Blackcurrants last week for a picnic but they weren't the nicest things to eat straight out of the packet and as we had been given a punnet of Strawberries from a local guy we shoved the Blackcurrants back in the fridge.

Not wanting to waste them and having too small a quantity to make jam or wine etc I had a quick look on the internet and found a recipe using silken tofu which I also had languishing in the back of my fridge unused and un-loved.

Basically it's: 125g Blackcurrants, 1 block (350g I think) Silken Tofu, 4tbsp sweetener, dash of Vanilla extract and quite a large splash of Creme de Cassis.

Whiz in a blender until smooth and chill until ready to serve.

I also made Biscotti but modified the recipe slightly... I just can't resist messing with things :mrgreen: Last time I made Biscotti it all went horribly wrong so I fed them to my OH and his brother! This time however this new recipe turned out great even though I shoved in 1/2 cup ground almonds and left out the anise (YUK!)

Looks yummy...except that I hate blackcurrants :( But would be good with blackberries or raspberries ...another one that cannot resist messing with recipes!! :lol: The biscotti sound really good with almonds..have to try that! :iconbiggrin:

i've been out in the garden picking blackberries/currants this morning with my oldest. he's put them in the freezer so that we can make jam with them at a later date.
