Ever wondered what to do with all those damaged spuds?
This is what I do with all the odd potatoes that get damaged when digging them up or a little soft or just for any reason, its a way of storing them in the freezer and very economical too...
Boil a big pan of potatoes...
Mash with a fork, not too smooth!
Add two beaten eggs, a couple of big handfulls of oats, a large grated onion, grated cheese to your taste, a sprinkling of herbs, good ones I've tried are thyme or sage, or for a nice spicy flavour try Cumin...
mix well.
with hands, form a burger shape, roll in seasoned flour with seseme seeds in, and put on tray to open freeze... pack into bags when frozen hard, shallow fry from frozen.
Yummy.

we would call those potatoe fritters. they are also good with some fried onion and bacon and a tin of creamed corn mixed in.

I serve them with fried bacon , eggs, or bean burgers, it is a excellent quick meal standby, and a good way of using up 'going over' spuds. I make huge batches and freeze dozens at a time.
