I am going to try my hand at making steak and kidney pie, :cheers: anyone got a really good receipe? need to feed 4 adults and 3kids so need to size it accordinally.

Youve probably made this by now but I recently made some. I used my slow cooker to cook the steak and kidney, onions & mushrooms with gravy for hours until the steak melted in my mouth. Then I used shop bought cheap pastry to line 3 shop bought foil pie dish thingies (big ones!) Waited for the filling to cool down then filled the pie dish, put the pastry top on, pressed all round the edges with a fork, made some pretty petals for the top, brushed with egg and cooked for 40 mins. Absolutely amazing!! I froze the other 2 without cooking and then just defrost before cooking next time. Dont forget to prick holes in the top of the pastry otherwise the top will blow off and you'll lose all your filling over the oven!!

Ive also made chicken and mushroom pies in similar fashion using either homemade mushroom or packet mushroom sauce. Chicken, onions and mushrooms cooked, add the sauce and follow same method.

France dont tend to be big on pies so I have a following of friends asking for pie for dinner lol.

Slow cooking is the best way to cook the filling, I'm not a lover of kidneys so I put stilton in ours.
First I brown the meat ( coated with seasoned flour ) in butter and oil in the cast iron pot on the hob, then remove and cook onions celery and sometimes carrots, I then deglaze the pot with Port or Red Wine, put everything back in, top up with beef stock and put it on top of the log burner for most of the day.
I assemble the pie using the shop bought puff pastry adding the Stilton before I put the lid on. :iconbiggrin: Lovely grub.

Forgot the mushrooms :roll:

Hi......,

The recipes of steak and kidney pie:

900g (2lb) Steak
1 Beef Kidney
350g (12oz) Shortcrust Pastry
450ml (¾ pint) Beef Stock or Water
2 Onion
4 tbsp Suet
2 tbsp Butter
2 tbsp Flour
2 tbsp Parsley
1½ tbsp Worcester Sauce
½ tsp Salt
½ tsp Pepper

Wash the kidney, remove membranes and trim, cut kidney in 1" cubes.
Cube the steak into 1" cubes.
Melt the suet in a heavy pan.
Add the chopped onions and cook, stirring often, until lightly golden.
Add the steak and kidneys and fry until browned on all sides.
Add stock or water, Worcester sauce, salt, and pepper bring to the boil.
Cover and cook over a low heat for 1½ hours, or until the steak is tender.
Preheat the oven to 200°C; 400°F: Gas 6
Blend the butter with the flour to make paste.
Drop small pellets of this paste into the sauce and stir to thicken it.
Place in a deep pie dish and sprinkle with parsley.
Cover with pastry, making a hole in the top to allow steam to escape, brush with a little beaten egg or milk to glaze.
Bake about 30 minutes, or until well browned.

Mmmm, what a coincidence, that's what I'm having for dinner tonight.
Home made steak & kidney pie, fresh peas, first cauliflower of the season and new potatoes.
I shall be contentedly full come 7 o'clock. :iconbiggrin:
